Red lentils are one of my all time favorite legumes. Their small size means quick cooking time which makes this soup a great option when you need something filling, flavorful and quick.
We all can identify with having nights where we just want something warm and comforting to eat but we just don't cave the energy to make something that will take a whole lot of effort or ingredients and that's when I whip out my red lentils to make a quick soup. I make several variations of this red lentil soup but this one is a favorite.
Why I love making this soup
A great use of staple items - I always have red lentils, veggie stock, red bell peppers, leeks, extra virgin olive oil and curry powder so making this soup almost never requires a trip to the grocery store.
Making variations are super easy - You can switch things up by adding more or less broth or stock, you can switch it up by using different veggies and it's a great way to use up any leftover veggies you have in your fridge.
One pot meals are the best - Whenever you can throw everything in one pot done for a meal is always a win for me.
