Spring is here and that means Arugula is at it's prime. This vegan arugula salad features crispy vegan bacon, vegan parmesan and capers.
This salad has become a go to for me. It's super simple and easy to make and has so much flavor. I used the Violife Parmesan Block, Hooray Foods Vegan Bacon and Capers from Trader Joe's. I tossed it all together with fresh lemon juice and extra virgin olive oil. I also sprinkled salt and pepper.
I love the Hooray Foods Vegan Bacon it has so much flavor and comes out super crispy and delicious and it's SOY FREE. I used about 4 slices and cut them up into bitesize pieces and cooked them in a non-stick skillet on medium heat for about 6-7 minutes on each side. I always sprinkle them with salt and black pepper. It always comes out super crisp and flavorful.
I also used the Violife Vegan Parmesan Cheese Block. This was my first time trying it and I really thought it was good. It had great texture and really good flavor, especially in this salad. I got it from Whole Foods.
