When you live in the heart of New England Lobster Rolls are absolutely everywhere around this time of year and I feel like me being vegan shouldn't mean that I can take a stroll along the water and enjoy a veganized version of a. classic lobster roll. To my surprise it was actually pretty easy to find a vegan plant based substitute for lobster. All you need is a jar of hearts of plalm (Hearts of palm are the edible tender inner shoots of palm trees. You can find them in jars in most grocery store in the same section that you find things like olives, artichokes and capers.) The best thing is that the cost is sooooooooo much cheaper than actual lobster and much healthier, CRUELTY FREE and plant based.
Cook Time: 15 minutes
Makes 2 Rolls
Ingredients:
1 jar of hearts of palm drained and chopped I jar usually yields about 1-1/2 cups chopped
2-3 tbs of vegan mayo (I use the Just Mayo brand) You can use more or less depending on your preference.
1 tsp of fresh lemon juice
1 tbs of fresh dill chopped
1 tsp of kelp seasoning
1/2 tsp of old bay seasoning
sea salt and pepper to taste
2 small rolls - toasted with a little vegan butter or extra virgin olive oil
bib lettuce
Preparation:
In a medium size bowl combine the chopped hearts of palm, vegan mayo, lemon juice, dill and old bay seasoning into a bowl and mix well. Add salt and pepper to taste. Next toast your roll and assemble your sandwich. I like to add an addition squeeze o lf fresh lemon juice and sprinkle a little extra old bay seasoning on top. THAT IS IT.....How simple is that?
