It's no secret that I love avocados. They are seriously one of nature's most perfect foods (When you master the delicate art form of opening them within that 24 hour period when they're perfectly ripe. Not too mushy not too firm). They're even better filled with more awesome food like these ones stuffed with a cucumber pico de gallo and drizzled with lime juice, coriander, olive oil, cayenne pepper and sea salt.
Prep Time: 10 Minutes
Makes 4 stuffed avocados
Ingredients
2 avocados sliced in half with the pit removed
3 plum (roma) tomatoes diced
1/2 a cucumber diced
1/3 a cup of finely diced red onion
1 small handful of fresh cilantro chopped
2 juicy limes
extra virgin olive oil
pinch of coriander powder
pinch of cayenne pepper
sea salt and pepper to taste
Directions
First squeeze a generous amount of fresh lime juice and extra virgin olive oil onto each avocado half and sprinkle with a pinch of coriander powder pepper and sea salt and set aside.
In a medium size bowl combine the tomatoes, cucumber, red onion and cilantro and mix well. Pour in about 3-4 tbs of extra virgin oil and a generous amount of fresh lime juice. Season with sea salt and pepper then fill each avocado with a generous scoop of the mixture. Finally, sprinkle each avocado with your desired amount of cayenne pepper. Thats it.
