This recipe is great when you really want something quick, easy and fresh. It’s so quick to make and you can always modify it to fit your taste.

Makes 2 servings
Ingredients
1 Large Bunch of Cleaned Kale Chopped (I Used Dino Kale)
About 2 Cups of Chopped Shiitake Mushrooms
3 Cloves of Minced Garlic
1/4 Tsp of Red Pepper Flakes
1 Tsp of Grated Ginger
2 Tbs of Extra Virgin Olive Oil
3-4 Tsp of Sesame Seed Oil
2 Tsp of Sesame Seeds
Salt to Taste
Preparation:
Place a large skillet over medium heat and add in the extra virgin olive oil, garlic, mushrooms and red pepper flakes. Cook for 2-3 minutes.
Add in the chopped kale. Cook while stirring for about 4-5 minutes or until the kale has wilted.
Next add in the sesame oil and grated ginger (add as much or as little as you like).
Finish by tossing in the sesame seeds and add salt and pepper to taste. That’s it.
