I love this recipe so much. Basmati rice is my favorite rice of all. Its nutty flavor compliments almost everything. For this recipe I used Brown Basmati rice but you can always use white rice. I also served this with toasted pita bread.
Cook Time:30 Minutes
Serves 2-3
All you need is:
4 cups of cooked basmati rice
1 medium potato diced small
1/2 an onion diced
1 carrot peeled and diced
3-4 mini sweet peppers diced (you can always substitute with 1/2 a red or yellow bell pepper)
1 cup of cooked chickpeas
1 garlic clove minced
2 tbs of fresh cilantro chopped
1/2 tsp of turmeric powder
1 tsp of ground coriander
1/2 tsp of onion powder
1/2 tsp of garlic powder
pinch of cinnamon
4 tbs of extra virgin olive oil
Salt and pepper to taste
Preparation:
Place a large skillet over medium heat and add in oil, potatoes, onion and cook for 7-8 minutes stirring ocassionally. Next add in garlic, carrots and peppers and cook for an additional 6-7 minutes or until the vegerables become tender. Then add in the rice, chickpeas, and seasonings and cook for an additional 5 minutes. Stir in cilantro and add salt and pepper to taste. That’s it.
