I haven't had a Philly in over 12 years and I always assumed that I would never have one again, especially since I don't eat any "mock meats" or soy based products. Then one day I decided to try it using just mushrooms and it completely changed the game for me. I used a combo of Oyster (They have such a meaty texture) and Shiitake and Button Mushrooms. I also made a Cashew Cheese Spread to use in place of cheese and mayo and it worked out magically. It worked out so good that I have had at least 1 Philly for the last 3 days. LOL. As always, you can use whatever mushrooms or vegan cheese that you prefer.
All you need is:
1 Handful of Oyster Mushrooms Chopped
1 Handful of Shittake Mushrooms Chopped
1 Handful of Button Mushrooms Chopped
1/4 of a Yellow or Green Pepper Sliced
1/4 of a Yellow Onion Sliced
1/4 Tsp of Garlic Powder
Salt & Pepper to Taste
1 7inch Sub Roll (You can use a larger roll if you like)
! Tbs of Extra Virgin Olive Oil for toasting your bread
3 Tbs of oil for cooking
Cashew Cheese Spread:
1 Cup of Cashews (Soaked in water for 30 minutes and drained)
3/4 Cups of Water
Juice of 1/2 a Lemon
3 Tbs of Nutritional Yeast
1 Tsp of Onion Powder
1/2 Tsp of Garlic Powder
Salt & Pepper to Taste
Preparation:
Start by making the Cashew Cheese Spread. Just combine all ingredients into a blender and blend until smooth and creamy and set aside.
Next brush your sub roll with olive oil and toast in a pan over medium heat for about 1 minute until golden. Place a medium sized pan over medium heat and add in 3 Tbs of oil. Add in onions and cook onions for 3-4 minutes. Then add in yellow or green pepper, oyster, shiitake, and button mushrooms, garlic powder and cook for 5-7 minutes. Next add salt and pepper to taste. Now its time to assemble your Philly. Just spread as much or as little of your Cashew Cheese Spread onto your sub roll and pile on the mushroom filling. Then take an moment to smell the deliciousness and take a bite *This is the part where tears began to roll down my face. Lol
*Store your leftover Cashew Cheese Sauce in an air tight container or mason jar and use it on whatever you like with in 5-6 days.
