Anytime I can find a new and healthy way to enjoy chocolate I feel obligated to share it with others. These babies were so incredibly fudgy and delicious and best of all guilt free. They are raw with no processed ingredients and completely plant-based. You can get creative with your toppings. I used crushed almonds, coconut and cacao nibs but you can always use whatever you like.
All you need is:
6-8 Wooden Skewers or Sticks
1 Cup of Chopped Dates
1/2 Cup of Cashew
!/2 Cup of Almonds
4 Tbs of Cacao Powder ( you can use more or less depending on how much you want)
4 Tbs of Coconut Cream or 3 Tbs of Coconut Milk (To make coconut cream just stick a can of coconut milk into your fridge overnight. I suggest using an organic brand that only contains coconut and water)
Toppings:
1/4 Cup of Cacao Nibs
1/4 Cup of Chopped Almonds
1/4 Cup of Coconut Flakes
Preparation:
In a food proccesor combine Dates, Cashews, Almonds, Coconut Cream or Coconut Milk and Cacao Powder and blend until all ingredients are broken down and combined. I use a ninja food processor and it took me about 45 seconds. (Be sure to stop and scrape down the sides of your food processor mid way) The fudge will be thick. Next use a tablespoon to scoop out mixture and roll into balls. Roll each ball in your desired toppings and carefully place each ball onto the skewers. Store in the freezer until serving time.
*You can have so much fun with this recipe. They taste amazing alone but you can even add a few drops of your favorite flavorings. I have tried them with vanilla extract, almond extract and even rum extract (which was my favorite.)
